Stone Fruit Caprese Salad Recipe

Now that its officially stone fruit season we love supporting our Western Slope Farmers by sourcing Colorado grown apricots, plums and peaches!A Stone Fruit Caprese Salad is a refreshing twist on the traditional Caprese salad, incorporating juicy stone fruits like peaches, plums, apricots, cherries and nectarines.

 

 

Here’s a simple recipe to create this refreshing dish!

 

 

Ingredients: 

 

 

  • 2-3lbs of ripe assorted stone fruits
  • Fresh mozzarella cheese, cut into small pieces and/or a fresh burrata
  • Fresh basil leaves
  • Extra-virgin olive oil
  • Balsamic vinegar
  • Honey (optional)
  • Flakey Salt

 

 

Instructions:

 

 

Prepare the Ingredients:

 

 

  • Wash, pit and slice the stone fruits.
  • Cut fresh mozzarella into bite sized pieces.

 

 

Assemble the Salad:

 

 

  • On a serving platter, create a layer of stone fruit slices. You can create a pattern or simply arrange them in a visually appealing manner.
  • Top with bite sized mozzarella or a burrata pulled open
  • Tuck fresh basil leaves throughout the arrangement.

 

 

Dress the Salad:

 

 

  • Drizzle extra-virgin olive oil over the plate.
  • Mix honey and balsamic vinegar to create a sweet balsamic glaze. Then drizzle over the top of the fruits and cheeses.
  • Season with flakey salt to taste.
